Blueberry Cream Cheese Muffins

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups blueberries, fresh or frozen
  • 6 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, milk, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and gently mix until just combined.
  5. Fold blueberries into the batter carefully.
  6. In a small bowl, mix cream cheese with powdered sugar until smooth.
  7. Fill each muffin liner halfway with batter, add a spoonful of cream cheese filling, then top with more batter.
  8. Bake for 20 to 25 minutes until golden and set.
  9. Cool for 5 minutes in the pan, then transfer to a rack before serving.

Notes

  • Do not overmix the batter to keep muffins tender.
  • Use room temperature cream cheese for a smooth filling.
  • If using frozen blueberries, add them directly without thawing.
