Birria Style Beef Sandwich

This Birria Style Beef Sandwich is the ultimate comfort food, featuring slow-braised beef, melted cheese, and crispy toasted bread, all served with rich consommé for dipping.

Ingredients

  • 2.5 to 3 pounds chuck roast, cut into chunks
  • 4 dried guajillo chiles, seeds removed
  • 2 dried ancho chiles
  • 2 roma tomatoes, roasted
  • 1 white onion, chopped
  • 6 garlic cloves, peeled
  • 2 tablespoons apple cider vinegar
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • Salt and pepper, to taste
  • 2 cups shredded Mexican cheese blend or mozzarella
  • 8 slices sourdough or white bread
  • Butter or beef fat, for toasting

Instructions

  1. Preheat oven to 325°F and set a large Dutch oven or pot over medium heat.
  2. Toast dried chiles in a dry pan for 1–2 minutes, then soak in hot water for 15 minutes. Blend with tomatoes, onion, garlic, vinegar, cumin, oregano, and a splash of broth until smooth.
  3. In the Dutch oven, sear beef chunks on all sides. Add the chili sauce, remaining broth, and bay leaves. Cover and braise in the oven for 3 hours.
  4. Shred the cooked beef. Strain the consommé and set aside for dipping.
  5. Layer cheese, shredded beef, and more cheese between bread slices.
  6. Dip sandwiches lightly in consommé, then toast in a skillet with butter or beef fat until crispy and golden.
  7. Serve with warm consommé on the side for dipping and enjoy.

Notes

  • Let the beef cool slightly before shredding for better texture.
  • Use a mix of cheeses for deeper flavor and better melt.
  • Don’t oversaturate bread in consommé before grilling to avoid sogginess.
