Birria Ramen

Birria ramen is a rich and comforting fusion dish that combines slow-simmered beef birria broth with springy ramen noodles, finished with tender shredded meat, a soft-boiled egg, and fresh toppings for a deeply satisfying bowl.

Ingredients

  • 900 g beef chuck
  • 6 dried guajillo chiles
  • 3 dried ancho chiles
  • 1 large white onion, chopped
  • 5 garlic cloves, peeled
  • 2 medium tomatoes, chopped
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 2 teaspoons salt, or to taste
  • 1.5 liters water or low-sodium broth
  • 4 portions ramen noodles
  • 4 large eggs
  • Fresh cilantro, chopped
  • Green chili, sliced
  • Shredded cabbage

Instructions

  1. Remove stems and seeds from dried chiles and soak them in hot water for 15 minutes.
  2. Blend soaked chiles with onion, garlic, tomatoes, vinegar, cumin, oregano, and soaking liquid until smooth.
  3. Place beef in a large pot and pour the blended sauce over it.
  4. Add bay leaves, salt, and water or broth, then bring to a gentle simmer.
  5. Cook on low heat for 2.5 to 3 hours until the beef is tender.
  6. Shred the beef and return it to the broth, straining if desired.
  7. Cook ramen noodles separately according to package instructions.
  8. Soft-boil eggs, peel, and slice in half.
  9. Assemble bowls with noodles, broth, beef, egg halves, cabbage, chili, and cilantro.

Notes

  • Cook noodles separately to keep them springy.
  • The broth tastes even better the next day.
  • Adjust chili quantity to control spice level.
