Beef Meatloaf

A classic beef meatloaf that is tender, juicy, and topped with a rich tomato glaze. This comforting dinner favorite is easy to prepare, deeply flavorful, and perfect for family meals or satisfying leftovers.

Ingredients

  • 2 pounds ground beef (80 percent lean)
  • 1 cup breadcrumbs
  • 1 cup milk
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ketchup, divided
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and lightly grease a loaf pan or baking sheet.
  2. In a small bowl, mix the breadcrumbs and milk and let them soak for 1 minute.
  3. Heat olive oil in a skillet and sauté the chopped onion until soft, then let it cool slightly.
  4. In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, garlic, half of the ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix gently until just combined.
  5. Shape the mixture into a loaf and place it in the prepared pan.
  6. Spread the remaining ketchup evenly over the top.
  7. Bake for 60 to 75 minutes until the internal temperature reaches 160 degrees Fahrenheit.
  8. Remove from the oven and let rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix the meat to keep the meatloaf tender.
  • Letting the meatloaf rest helps lock in the juices.
  • Leftovers are excellent for sandwiches the next day.
