Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons green onions, finely chopped
  • Cooking oil for frying

Instructions

  1. Heat about 2 inches of oil in a deep skillet over medium heat until hot.
  2. In a bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and paprika.
  3. Place beaten eggs in a second bowl and panko breadcrumbs in a third bowl.
  4. Dredge each shrimp in the flour mixture, dip into the eggs, then coat thoroughly with panko.
  5. Fry shrimp in batches for 2 to 3 minutes per side until golden and crispy.
  6. Transfer fried shrimp to a paper towel-lined plate to drain excess oil.
  7. In a separate bowl, mix mayonnaise and sweet chili sauce until smooth.
  8. Toss the warm shrimp gently in the sauce until evenly coated.
  9. Garnish with chopped green onions and serve immediately.

Notes

  • Fry shrimp in small batches to keep the oil temperature steady.
  • Toss shrimp in sauce just before serving to maintain crispiness.
  • For extra heat, add a pinch of chili flakes to the sauce.
