Almond Flour Cookies

Soft, chewy, and naturally gluten-free almond flour cookies filled with gooey chocolate chips. Quick to make and irresistibly delicious.

Ingredients

  • 2 cups almond flour (finely ground)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil or butter (melted)
  • 1/3 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 to 2/3 cup chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together melted coconut oil, maple syrup, egg, and vanilla until smooth.
  3. Add almond flour, baking soda, and salt. Stir until just combined.
  4. Fold in the chocolate chips.
  5. Scoop dough onto the prepared baking sheet, spacing evenly.
  6. Gently press the tops if you want flatter cookies.
  7. Bake for 10 to 12 minutes, until edges are golden and centers just set.
  8. Let cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes

  • Use finely ground almond flour, not almond meal, for the best texture.
  • Underbake slightly for soft, chewy centers.
  • Sprinkle flaky salt on top before baking for extra flavor.
  • Chill dough for 10 minutes if it feels too sticky.
